Smoked OG Mushroom Uttapams

Ingredients for 3 Mini Uttapams

1 ½ cup of fermented dosai batter
2 tbsp gingelly oil
20 gms of Smoked OG Mushrooms
1 onion
1 tomato
4-5 curry leaves
A few stems of fresh coriander

Procedure

  1. Finely chop your coriander, tomato and curry leaves.
  2. Add a few pinches of salt to the batter if it isn’t already salted.
  3. Take a flat pan/dosai tawa, heat it over a flame.
  4. Once the pan is hot, pour the dosai batter using a rounded spoon, make three “CD” sized circles.
  5. Once the air bubble holes appear on top of the uttapams, sprinkle your chopped tomato, coriander and curry leaves evenly on them. Finish with Smoked OG Mushrooms.
  6. Flip the uttapams and cook both sides until they are golden brown and crispy.
  7. Garnish with freshly chopped coriander and serve hot with sambar and chutney.
